This is a very simple recipe for an absolutely lovely variation on a classic tuna melt. It's the perfect fast and easy lunch, and adds a spicy punch that keeps you satiated for the rest of the day.
BUFFALO TUNA MELT SANDWICH:
Servings: 2 sandwiches
Time: 5-10 minutes
Ingredients:
4 slices of bread
1 can of tuna packed in water
1-2 slices of cheese, preferably American
1.5 tbsp buffalo sauce
1.5 tbsp blue cheese dress
1/2 tbsp mayo
2 slices of red onion (optional)
1.5 tbsp finely chopped celery (optional)
salt and pepper, to taste
Directions:
Open the can of tuna and drain the water away. I just do this by removing the lid and holding it over the sink to drain.
Add the tuna to a bowl. Stir in the rest of your ingredients: mayo, buffalo sauce, blue cheese dressing, and salt and pepper.
Heat a skillet over medium-high heat. Meanwhile, butter one each side of two slices of bread, preferably French or white bread.
Lay one piece of bread in the skillet and top with a thick layer of your tuna fish salad, with the optional red onion on top.
Top with a piece or two of cheese and a second piece of buttered bread (butter-side up).
When the bottom bread is golden brown, carefully flip the entire tuna melt.
Continue cooking until the second side is browned.
