In honor of the Halloween playlist that has been playing 24/7 since October 1, here is a simple recipe for "monster mash" themed purple yams.
MONSTER MASH PURPLE YAMS:
Servings: 4
Time: 1.5 hours
Ingredients:
4 purple sweet potatoes
1 sweet yellow or white onion
1/2 cup tomato pasta sauce (marinara or pizza also work)
1/2 cup shredded mozzarella
Drizzle of olive oil
Salt & pepper, to taste
Directions:
Preheat the oven to 425 degrees F.
Peel your purple sweet potatoes. This is not strictly necessary, but adds to the fun purple color of the dish. If you decide to keep the skin on for the health benefits, wash with a vegetable brush.
Stab the potatoes using a knife or fork. This helps steam escape and makes it cook better.
Wrap the potatoes in tinfoil, and place on a baking sheet.
Cook for around 1 hour.
While cooking the potatoes, heat up the pasta sauce on the stovetop over low to medium low heat.
As the sauce heats up, cut teeth out of the onions by making triangular shapes.
Take out the potatoes and almost slice in half, creating a flap. Using a fork, press down on the potato to mash it up slightly, while still keeping for form of the potato overall. Drizzle olive oil on top and sprinkle salt and pepper over. Press down to create a little cavern in the middle.
Sprinkle 2 tbsp of shredded mozzarella cheese into the cavern for each potato. Top with 2 tbsp hot tomato sauce.
Last but not least, decorate the "mouth" with the teeth but pushing the base of the triangle into the soft potato.
